Riserva San Massimo is a natural uncontaminated territory in the pristine natural reserve of Parco del Ticino an area in the Northern part of Lombardy, near the Swiss-Italian Ticino border where the Ticino river thus the name, flows through in a long meander before it pours into the Po’ river.
A preserved natural territory in which the existence of different habitats favours the genetic exchange between the plant species and the fauna’s.
A land of Agricultural areas and uncontaminated forest land, natural springs, native fruit trees giving life to an incredible and unique landscape, It is the cradle of a biodiversity in which also the wild fauna has found its ideal habitat, creating a perfect ecological environment.
It is in this incredible context that the rice of Riserva San Massimo is produced. A Carnaroli Autentico of the highest quality, cultivated exclusively in the nature reserve from the best, 100% Carnaroli certificated, seeds. The rice is s still produced in a completely artisanal way, hand picked and before being husked immediately dried at low temperature on the farm to keep all its organoleptic properties and all the flavors intact.
At the end of the drying process the rice is stored in ventilated silos, just like it was done in the past, without adding any kind of preservative, it is than husked based on the clients requests, the rice is husked in small quantities, using conical stones that rid the grain from the pericarp in a completely natural way. This way the maximum freshness of the final product can be guaranteed.
Today Riso San Massimo is considered by most starred* Michelin chefs to be the best Carnaroli rice available. Thanks to its well-balanced starch content it is one of the best rice to make your (typical) risotto recipes with always that perfect throughout finishing that we call “al dente” consistency for the best uncompromising results.
